Peter Hatt has been Executive Chef at Le Royal Meridien Phuket
Yacht Club for four years and he continues to develop some of the
most exciting food and beverage promotions found on Phuket.
His most recent project is the offer of an afternoon tea service
in the Lobby Lounge of the resort which overlooks Nai Harn Beach,
the Andaman Sea and far off Cape Promthep, the most southern point
on Phuket.
"We are located at the far south end of the island quite far
from many hotels and resorts such as the Laguna Phuket complex.
But this is maybe the most beautiful region of Phuket, well worth
the effort to visit either by taxi or Avis rental car," explains
Peter. "A tourist can have lunch in their hotel and drive slowly
south exploring the beautiful beaches along the way before arriving
at Le Royal Meridien Phuket Yacht Club where we will serve a refreshing
tea between 14.00 and 18.00hrs."
But Chef Peter doesn't just serve tea. What he delivers is a full
menu of light snacks and pastries, coffees, traditional teas and
"infusions" designed to revitalize anyone not used to
the tropical heat.
The Royal Afternoon Tea includes English tea sandwiches, home made
scones and oven fresh muffins served with butter, jam and marmalade
or Devonshire clotted cream upon request. Also included are fruit
tartlets in season, Windsor cake and choice of beverage.
Peter pays great attention to detail to ensure that his afternoon
treats are tastefully presented.
"We should be able to pamper everybody's need," comments
Peter. "I have a great staff in the kitchen and we work to
create excitement for our guests. We want them to look forward to
each meal that offers something fresh, something unexpected and
something delicious."
The Afternoon Tea has Jamaican Blue Mountain coffees and a full
range of Twinings teas including such favorites as Earl Grey, Ceylon
Orange Pekoe and Darjeeling in addition to Japanese green tea and
a variety of Chinese teas. But Peter Hatt is most excited about
the collection of infusion drinks offered over tea.
"Our infusion drinks stimulate the body in very subtle yet
exciting ways. We have two Chinese infusion teas, rose flower and
chrysanthemum, which have no caffeine but refresh and revive anyway,"
details the Chef. "We also offer traditional tea sandwiches
as smoked salmon with cream cheese and onion sprouts or champagne
ham with mustard butter and water cress. We have brownies with vanilla
bean sauce and cream brulee and almond tuille."
The Afternoon Tea menu explores new ideas on how to enjoy a late
afternoon refreshment with presentations which have a sense of drama.
Chef Peter is also responsible for the upscale Regatta restaurant,
home of resident Chef Andrea Accordi who makes meals that are chic
and fresh cooked in an al fresco style.
There's nightly themed buffets on the Promenade restaurant which
are the most extravagant food feast found on the island.
"In the past few years, new and better quality products have
become available so we can create new menus which inspire, not only
my kitchen staff, but our valued guests who return each year for
long periods."
